Easy Crowd Pleaser – No Bake Cheesecake

From across the pond we get a twist on an old favorite. Okay it may not be from England but it is sure to please. There are a lot of good desserts that one can prepare especially with the holiday season coming up good ideas abound. If you are in the mood for firing up the stove and oven then there are a lot of options that will suffice but there are other possibilities and they are delicious just the same.

One such option is the no-bake cheesecake. Got condensed milk and cream cheese? Well then you can have yourself one mighty-fine cheesecake. The recipe is simple and you can be done in no time.

You will need 1 cup of crouched high fiber cookies (sometimes called digestive cookies), 2 tbsp desiccated coconut, 1/4 cup melted butter, 1 big can of condensed milk, 2 packages of cream cheese, and juice from two large lemons.

Grease the bottom of an 8 inch pan with wax paper. Mix the crushed cookies coconut, and melted butter and then press the mixture ever-so-lightly into the pan. Let it chill for one hour. This part of the dish is going to be your delicious crust.

Take the condensed milk and cream cheese and blend them together into a completely smooth consistency. Blend in the lemon juice so that it completely permeates the mixture. Spread half of the cream mixture onto the crust that you have chilled and let this chill for four hours.

You can make variations on the theme by adding fruit for a nice tart kind of concoction. There are many other things one can do to enhance the no-bake cheesecake. It can be the basis for a more elaborate dessert. Just let your imagination take over. Bon appetite!
